Orange Organic Beets

I looked at these bunches of orange organic beets several weeks ago and just couldn't bring myself to buy them...until yesterday!  I love the color and shape of them.  They were a blast to paint.  There was just soooo much color.  Now.  To figure out how to eat them!

Aren't they a gorgeous color?

Love the painting Linda. The beets are gorgeous. You need to find a recipe and there must be a zillion of them online. Good job!

I think that this is one of my favorites of your paintings. . . love this!
Oh, and Cathyann is right about roasting them, olive oil, little sea salt and pepper and then cut up in an Arugula Salad with walnuts and craisins, tiny bit of balsamic glaze (& olive oil to balance) and feta crumbles; YUM!
